Keto Cauliflower Fried Rice

I have a confession to make: I love rice…like love love it. Especially, fried rice. I could eat it three times a day, every day, and never get tired of it.  My mom told me when she was pregnant with me she craved rice all the time so it was meant to be, right?

The problem isn’t that I love fried rice…the fried rice doesn’t love me back! Don’t get me wrong, rice can be part of a healthy diet…in moderation.  I am an addict and cannot stop eating it – it’s okay to admit when you have a problem.  My problem isn’t with just rice either but all carbs.  So what is a carb loving gal to do?

Keto! Surely you’ve heard of the keto diet right?  If not, what rock have you been sleeping under?  Keto recipes are everywhere these days.  Even with the massive popularity keto is getting right now (who doesn’t love a diet you can eat bacon on?), I was still a little skeptical myself.

Keto is short for ketogenic.  You alter your diet, specifically your macros (everything you eat is classified as a carbohydrate, fat, or protein), to eat low carb, high fat and protein.  This forces your body to convert to burning fat for energy instead of carbs, ie you lose weight.  Sounds amazing right?  I was still skeptical, but the more keto recipes I try, the more I am really starting to love it.

One of my new obsessions is keto rice, and it has a secret ingredient – cauliflower rice! That plain boring vegetable everybody is always kind of meh about is actually a very versatile ingredient.  The cauliflower acts as a substitute for the rice and you cannot detect a difference!  I couldn’t. Hence the name keto cauliflower fried rice.

There are lots of articles online that will teach you how to make your own cauliflower rice, but I did it the lazy way.  I bought a steamable bag of cauliflower rice in the frozen food section of my local WalMart. I found some dried cauliflower rice online too if you’d rather shop that way. I wasn’t really sure how to go about using the cauliflower instead of regular rice, so I made my usual fried rice, but steamed the cauliflower in the microwave and added it into my veggie egg mixture at the end and used a little extra soy sauce.

Cauliflower fried rice is simply amazing. In fact, cauliflower fried rice is quickly becoming a favorite of mine. Honestly, what really sets this recipe apart is the Ghee Butter!

It turned out way better than I thought, and set my mind reeling over how else I could incorporate more keto rice into my diet, so stay tuned for more recipes in the future. For now, enjoy the keto cauliflower fried rice!
